    I'm gonna go ahead and give this place 5 stars. So I'm a donut-o-holic. I'm a pilot, and I try donuts everywhere. You'd think I was a cop, right? Well, pilots love donuts too. I'd given up on Arizona donuts. Everything I've tried in a year of living here has been super average at best. "But it's just a donut," you say. No. It's not. So, a great donut is a delicate balance. A great donut is pillowy-soft, but just firm enough to hold its shape. A crappy donut is really firm and sometimes stiff. A great donut MELTS in your mouth. A crappy donut has to be chewed. A great donut has dough that has a medium structure. Not too many holes, not too light, and not too dense. It HAS to be just right. Also, a great donut leaves no greasy aftertaste. It's a clean finish. A crappy donut leaves the roof of your mouth coated in a slightly greasy film. A crappy donut tastes like used oil. A great donut is dropping into a fryer where the oil is changed every few days, and the oil is high quality. Canola oil, for example, used to be a truck lubricant. So eating a donut fried in old canola oil is what you get at a hospital cafeteria or a crappy donut place. And last, a great donut has FLAVOR. It's not just sugar dough. There should be a slightly vanilla tinge in every bite. Not too much though. And it has to be good quality vanilla, not imitation vanilla. A great donut, then, is not super cheap. Gold ingredients, fresh oil, not letting them get stale, and authentic, fresh ingredients are the secrets of great donuts. It's rare you find all of those at a local donut place. Express Donuts has them all. Try them all because you won't go wrong. Glazed, maple, old fashioned...whatever. All fresh and tasty and perfectly doughy. Oh, and very fresh. There is NOTHING so offensive as a 3-day old donut. They should be outlawed. What one eats at a grocery store or Dunkin Donuts is a glob of chemicals, formed into a dough and stuffed with plastics, fake flavors, and preservatives, dropped into a vat of 15-day old industrial lubricant, then covered in glaze and left on the tray for up to 4 days or until the dude with the corporate polo shirt buys them for the office at half-price so he can impress his boss, who doesn't know the difference between a plastic lard-cake and a work of art. Express donuts... take it from me: darned good donuts. 5 stars worth.
